Roasted Beets &Sauteed Beet Greens

​Roasted Beets with Sautéed Beet Greens
1 bunch beets with greens attached
½ small onion
1 clove garlic
1 Tbl spoon coconut oil
Salt
Pepper
 
Vinaigrette
1 Tbls spoon olive oil
1 Tbl balsamic vinegar
1 tsp honey
¼ cup of basil leaves shredded
Salt
Pepper
 
Roasted Beets:
  1. Preheat the oven to 400 degrees
  2. Cut the greens off and wash
  3. Scrub the beets
  4. Prick the beets with a fork, place on a tray and place in the oven
  5. Bake for 50 minutes (to 1 hr) until a sharp knife inserts easily into the middle
  6. Let it cool slightly (approx. 10 minutes)
  7. Peel the beets and cut into quarters
  8. While still warm, mix in vinaigrette
  9. Just before serving stir in the basil
 
Vinaigrette
  1. Whisk together olive oil, vinegar, honey, salt & pepper
 
Sauteed Beet Greens
  1. Roughly chop beet greens and stems
  2. Heat coconut oil  on medium heat
  3. Add garlic and sautee until fragrent (then remove)
  4. Sautee until onions are slightly charred  
  5. Add greens while still wet and stir
  6. Add salt and pepper to taste
  7. Cook until wilted.
