Oven Roasted Lemon Ginger Chicken

Oven Roasted Lemon Ginger Chicken
1 Pk Chicken Breasts (about 3 med pieces)
1 lemon juiced + 1 lemon sliced
1-2 inch fresh ginger grated
2 cloves of garlic crushed
1 Tbls honey
½ Tsp fresh thyme or 1 tsp dried
2 Tbls oil
1 Tbls coconut oil
Salt
Pepper

  1. Place lemon juice, grated ginger, crushed garlic cloves, honey, oil, thyme, salt and pepper in zip-lock bag, add chicken breasts.
  2. Make sure chicken is well coated
  3. Marinate for at least 2 hours – up to over night
  4. Heat oven to 350 degrees
  5. Heat coconut oil in pan – med heat until oil is hot
  6. Add chicken pieces (do not crowd) – turn pieces over  when brown (total 5 – 10 minutes)
  7. The idea is to brown the chicken without cooking  on the inside
  8. Place browned chicken on baking sheet
  9. Place lemon slices on the chicken
  10. Place in the oven
  11. Baste every  5 minutes for 15 minutes with the marinade
  12. Take out of the oven at 20 minutes.  (The  juices of the chicken will run clear when stuck with a knife at the thickest parts.  The idea is to NOT over cook so that breasts remain moist.
  13. If chicken is not brown enough – broil on high for 1 minute.
